Nicholls State University Culinary

- Thibodaux, Louisiana

Technical Hurdles:Associated Design Group, Inc. provided Plumbing, HVAC, Fire Protection, and Electrical services for this 33,000-square-foot, state-of-the-art culinary facility. The design included six commercial kitchens, a full-size restaurant, technology-driven lecture rooms, and a dedicated student study lounge. Mechanical systems featured air-cooled chillers, chilled water air handling units, hot water boilers, and variable volume boxes with hot water heat. Variable flow hoods and fans were integrated in the kitchens to minimize energy consumption by adjusting ventilation to actual usage.

Logistical Constraints:The electrical design incorporated LED lighting, high-efficiency fluorescents, and metal halide lighting to meet performance and aesthetic requirements. The building was connected to the University’s medium voltage system, extended as part of the project. To reduce installation costs and simplify maintenance, utility distribution units were installed in the kitchens, minimizing the amount of electrical gear required under kitchen hoods.
